Milagu Poricha Kozhambu

MILAGU PORICHA KOZHAMBU



 Preparation Time: 15 minutes
Cooking Time: 20 minutes

Ingredients Required:
1.Green Vegetables
Chou Chou-1(small)
Pudalangai-1(small)
Murungai Beans-1/4 kilo
Carrot-2(small)
Brinjal -2(small)
Avarakai-100 gm
Potato-1(small)
Murungakai-1
Kothavarakai, Vellai Poosanakai, Sakkarai Poosanikai, Pachai Pattani, Butter Beans can be added according to one’s preference and taste.
2.Toor dal -150 to 200 gm nicely cooked and mashed
3.Rasam Powder-3 Tablespoons
4.Milagu, Jeeragam and Urad dal, a teaspoon of each taken, roasted  and  powdered together coarsely
5.Mustard ,Urad dal, Ghee and Curry leaves for seasoning
6.Salt to taste
Procedure:
v  Cut all the vegetables into even sized cubes and keep it ready.
Note: Wash all the vegetables before chopping and soak the cut pieces immediately in water
v  Add rasam powder ,salt and turmeric powder to the vegetable mix and keep it in medium flame covered for a good 10 minutes.
Note: Some people like to cook vegetables in a pressure cooker which I would not suggest as all the veggies lose their natural color.
v  Now add the mashed toor dal and if you like jiggery you can add a small quantity and you will see that it enhances the taste.

v  Before removing the dish from  fire add the roasted milagu-jeeragam -urad dal powder .

v  Keep it for a minute and then switch off the gas stove.

v  Take a tablespoon of ghee and season with a pinch of mustard, urad dal and a liberal lot  of curry leaves.

v  Now your excellent looking and tasting  Milagu Poricha Kozhambu or Milagootal is ready to serve.

v  Goes  well with hot rice, chappatis and naan.
Serving : The ratio prescribed here serves for 4 to 5 people. The more the vegetables added the more is the volume.
Nutritional value: In Brahmin Communities, this dish is a favorite and it is served for girls after delivery to boost up their general physical strength.
Milagu: Carminative, Stimulant, Anti-asthmatic, Anti-periodic, Antidote, Anti-vatha, Expectorant.
Jeeragam: Aids in digestion, purifies blood, appetizer.
Good for digestion, high in fibre content and adds positive calories to your body. Though slightly spicy it serves the purpose of improving  your health and very tasty too.
