BAJJI MAAVU



Preparation Time-10 minutes
Cooking time-15 minutes



Ingredients Required:
  1. Kadalai Maavu-2 cups
  2. Maida Maavu-1 cup
  3. Arisi Maavu-1/2 cup
  4. Dosai Maavu-1/2 cup ( makes the bajji puffy and soft)
  5. Saambar podi-1 teaspoon ( gives good flavour)
  6. Kaara podi-3 teaspoons
  7. Perungayam-a little
  8. Salt- to taste
  9. Refined oil-1/2 litre
Procedure:
  • Mix all the ingredients with required amount of water to bring the batter to a little thick but fluid consistency
  • Choice of vegetables - vaazhakai,urulaikilangu, chouchou, kathirikai, cauliflower, vengayam, kudaimilagai 
  • Some mix little Chutta ennai with BAJJI Maavu so that it wont consume much oil while frying.
  • This batter is sufficient to prepare some 20 bajjis
  • Hold the BAJJI Maavu pan in your left hand and dip the thinly sliced vegetable in the batter with your right hand and allow it to slide it in the hot oil
  • Use some fine grator to slice the vegetables evenly and fry no more than 3-4 bajjis at a time
  • Coconut chutney and tomato sauce go well with BAJJI
Tamil Equivalents:
  • Kadalai Maavu-gram flour or began
  • Arisi Maavu-rice flour
  • Maida Maavu-all purpose flour
  • Dosa Maavu-dosa batter
  • Sambar podi-sambar powder
  • Kaara podi-chilli powder
  • Perungayam-asofoetida
  • Vaazhakai-plantain
  • Urulaikilangu -potato

  • Chouchou-Chayote
  • Kathirikai -brinjal
  • Vengayam -onion
  • Kudaimilagai -bell pepper or capsicum
  • Chutta ennai-used oil
